I remember the first time I had a lettuce wrap... I thought it was the most innovative thing ever! I was craving an Asian inspired meal for dinner one night and I came up with these. For this recipe, I used avocado oil cooking spray, but any cooking spray will do. If you don't use ginger frequently in your kitchen, I suggest buying frozen crushed ginger cubes at your grocery store. The cubes can last in the freezer for up to 1 year and they are easy to throw in a variety of dishes. I hope you enjoy these lettuce wraps as much as I did!
Ingredients:
1 lb ground chicken
2 cloves garlic, minced
1 tsp crushed ginger
1 8oz can diced water chestnuts
3 carrots, shredded
2 green onions
2 Tbsp gluten free hoisin sauce
1/4 cup gluten free soy sauce
1 head bibb lettuce or petite romaine
Avocado oil cooking spray
Instructions:
First do some prep work. Drain water chestnuts and set aside. Wash and peel 3 carrots. Using a cheese grater or food processer, shred the carrots and set aside in a bowl. You can also use pre shredded carrots! Chop green onion and set aside with shredded carrot. Clean and break apart the leaves from the head of bib lettuce. Set aside for serving.
Now, it's finally time to cook the chicken. Spray a pan with cooking spray. Over medium heat, add garlic and ginger to the pan. Heat for about 45 seconds, then add ground chicken and water chestnuts. Break up the ground chicken with a wooden spoon in bite size pieces. When the chicken is cooked, add hoisin and soy sauce. Mix into the ground chicken mixture until it all the chicken is coated. Add green onion and shredded carrots and mix until combined. Add to a serving dish and spoon the ground chicken mixture into lettuce to make a wrap! Enjoy!
