Crispy Prosciutto and Goat Cheese Salad

Ingredients:

• 4 c spinach

• 1/2 c cherry tomatoes

• 1/4 c toasted pine nuts

• 3 slices prosciutto

• Crumbled goat cheese

• 2 Tbsp olive oil

• 1 Tbsp white wine vinegar

• 1 Tbsp Dijon mustard

• Salt and pepper, to taste


Directions:

Preheat oven to 400 F. Place prosciutto on a baking sheet and bake for 5-7 mins. Let cool. In a small mixing bowl, whisk together oil, vinegar, mustard, salt, and pepper. Pour dressing over spinach and cherry tomatoes. Mix until spinach is coated with the dressing. Once the prosciutto is fully cooled, break it into small pieces. Top the spinach with the crispy prosciutto pieces, toasted pine nuts, and crumbled goat cheese. Serve immediately and enjoy!
