This is a really easy and delicious breakfast. I usually make it in the beginning of the week and I can heat it up all week. It is perfect to make for a brunch with guests, too!
Ingredients:
3 cups shredded zucchini (I use a cheese grater to shred my zucchini!)
1 small, chopped onion
3/4 cup gluten free Bisquick
4 large eggs
1/2 cup vegetable oil
1/2 cup shredded parmesan cheese
1 teaspoon parsley flakes
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions: Preheat oven to 350 degrees F. Combine all ingredients in a bowl and pour into a greased glass pie dish. Bake for 30 minutes. Serves 8.
