Homemade Pickled Onions

Kamil loves fermenting and pickling different foods! Last month he made a variety of pickled onions. We’ve been adding them to burgers, tacos, and delivering them to friends & fam. Here's how he did it.

Thinly slice an onion (red onion was used in this recipe, but any onion you prefer will do). Add onion to a mason jar. If you want to make a variety of flavors, add whatever you desire to the mason jars with the onions. Some varieties we tried include chiles, mustard seed, and garlic. In a sauce pan, add 3/4 c white vinegar, 3/4 cup water, 1 Tbsp sugar, 1 1/2 tsp kosher salt, 1 tsp black peppercorns. Bring to a boil, then allow the mixture to cool. Once the mixture is cool, add to the prepared mason jars. Make sure the mixture is cooled completely before placing the lid on the jar. Refrigerate for at least 1 hour before enjoying!
