I’ve always loved chocolate covered nuts, so when I discovered Skinny Dipped chocolate covered almonds, I was instantly hooked. I created a way to use them in energy bites. These are so delicious as a snack, but sometimes I have them for a to-go breakfast before heading out to work. The great thing about making energy bites is that they are super versatile. You can get creative with this recipe and use a variety of nut butters, a different variety of Skinny Dipped nuts, add chocolate chips, or eliminate the shredded coconut— the possibilities are endless! Here is the recipe for my Skinny Dipped Energy Bites.
Ingredients:
1/2 cup pitted dates
1/2 cup almond butter
1/2 cup Skinny Dipped Super Dark + Sea Salt almonds
1 Tbsp chia seed
1 Tbsp ground flax seed
1/2 cup shredded coconut
Instructions:
In a food processor, add dates, almond butter, Skinny Dipped almonds, chia seed, and ground flax seed. Pulse until the mixture resembles cookie dough. Fold in shredded coconut. Roll into 12 even balls. Store in an airtight container in the refrigerator For at least 30 minutes. Enjoy!
