I developed this recipe for my niece, Henley. She was on a gluten free diet at the time and I thought sneaking in veggies to meatballs would be genius. That's how I came up with these gluten free turkey zucchini meatballs! They are so delicious and kid approved!
Ingredients:
1 lb ground turkey
1 medium zucchini, grated
2 cloves minced garlic
1 egg
1/2 c grated pecorino Romano cheese
1 Tbsp fresh basil, finely chopped
1 Tbsp fresh parsley, finely chopped
1 tsp onion powder
salt and pepper
Directions:
Preheat the oven to 400 F. Using a cheese grater, grate the zucchini. Put grated zucchini in a cheese cloth or a thin kitchen towel. Squeeze grated zucchini to release water. Get as much out as you can! Then, add grated zucchini in a large bowl. Add ground turkey, minced garlic, egg, grated cheese, basil, parsley, onion powder, salt, and pepper. Mix until combined. Make into even meatballs. Bake at 400F for 20-25 mins. Add to your favorite sauce and enjoy!
